Ingredients

Salmon

  • 4 salmon fillets (6 oz each)
  • 2 tbsp blackening seasoning
  • Juice of 1 lemon

Stuffing

  • 2 cups fresh spinach
  • 4 oz cream cheese (softened)
  • 1 cup grated Parmesan cheese

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Sauté Spinach: Heat a skillet over medium heat, add the fresh spinach and cook until wilted, about 3 minutes. Remove from heat and allow to cool slightly.
  3. Prepare Stuffing Mixture: In a bowl, combine the sautéed spinach, softened cream cheese, and grated Parmesan cheese. Mix well until fully incorporated.
  4. Season Salmon: Pat the salmon fillets dry with paper towels. Season both sides generously with blackening seasoning to add a bold, spicy flavor.
  5. Create Pockets: Using a sharp knife, carefully create a pocket in each salmon fillet without cutting all the way through. Fill each pocket with the spinach, cream cheese, and Parmesan mixture.
  6. Bake Salmon: Arrange the stuffed salmon fillets on the prepared baking sheet. Drizzle the lemon juice over the top of each fillet. Bake in the preheated oven for 20 minutes until the salmon is cooked through and flakes easily with a fork.
  7. Serve: Remove from the oven and serve immediately, optionally garnished with lemon slices or fresh herbs for extra brightness and presentation.
