Ingredients

Quinoa Mixture

  • ¾ cup uncooked quinoa, rinsed
  • 1½ cups vegetable broth or water
  • 2 eggs, lightly beaten
  • 2 cups broccoli florets, finely diced
  • 1 cup yellow onion, finely diced
  • 1 garlic clove, finely minced
  • 1½ cups shredded cheddar cheese
  • ½ teaspoon paprika
  • Crushed red pepper, optional, to taste

Instructions

  1. Cook Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth or water. Cook according to package directions, usually about 15 minutes, until fluffy and liquid is absorbed. Remove from heat and let the quinoa cool completely.
  2. Mix Ingredients: In a large bowl, mix the cooled quinoa with beaten eggs, finely diced broccoli, onion, minced garlic, shredded cheddar cheese, paprika, and optional crushed red pepper until well combined.
  3. Preheat Oven and Prepare Pan: Preheat your oven to 350° Fahrenheit (175° Celsius). Lightly spray mini muffin tins with nonstick cooking spray to prevent sticking.
  4. Fill Muffin Cups: Spoon a heaping tablespoon of the quinoa mixture into each prepared mini muffin cup, spreading evenly but not packed tightly.
