Ingredients

Chicken

  • 2 large chicken breasts

Beans and Liquids

  • 2 cups white beans (cannellini or great northern)

  • 0.5 cup heavy cream
  • 1 tablespoon lime juice

  • 2 tablespoons Cajun seasoning

Instructions

  1. Season the chicken: Season the chicken breasts with salt, pepper, and 1 tablespoon of Cajun seasoning evenly on all sides.
  2. Sear the chicken: Heat olive oil in a Dutch oven over medium-high heat. Sear the chicken until golden brown on both sides, about 4-5 minutes per side. Remove the chicken and set aside.

  4. Add broth and beans: Pour in the chicken broth and add the white beans along with the remaining 1 tablespoon of Cajun seasoning. Stir to combine.
  5. Simmer with chicken: Return the shredded chicken to the pot and let the chili simmer gently for 30 minutes to allow flavors to meld together.
  6. Melt the cheese and cream: Stir in the cream cheese and heavy cream until fully melted and the chili has a smooth, creamy consistency.
