  • 1 sheet puff pastry, thawed

Filling

  • 2 large yellow onions, thinly sliced
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh thyme leaves, chopped
  • Extra thyme sprigs for garnish

Instructions

  1. Prepare the onions: Heat the olive oil in a large skillet over medium heat. Add the thinly sliced onions, sprinkle with salt and pepper, and cook slowly, stirring occasionally, until the onions are golden and caramelized, approximately 25 to 30 minutes. Remove from heat and stir in the chopped fresh thyme leaves.
  2. Preheat the oven: Set your oven to 400 degrees Fahrenheit (200 degrees Celsius) to prepare for baking the pinwheels.
  3. Roll out the puff pastry: On a lightly floured surface, roll out the thawed puff pastry sheet into a rectangle about 12 by 10 inches, maintaining an even thickness.
  4. Add the filling: Evenly spread the caramelized onion and thyme mixture over the surface of the puff pastry, leaving a small border along the edges to prevent overflow during baking.
  5. Form the pinwheels: Starting from the long side, tightly roll the pastry into a log shape. Using a sharp knife, slice the log into 1-inch thick pinwheels.
  6. Bake the pinwheels: Place the pinwheels on a baking sheet lined with parchment paper, spacing them about 1 inch apart. Bake in the preheated oven for 15 to 20 minutes or until the pastry is puffed and golden brown.
