A delicious and hearty Chicken Avocado Melt Sandwich featuring shredded chicken, creamy avocado, and melted cheddar or Monterey Jack cheese on toasted sourdough bread. This easy-to-make sandwich is perfect for lunch or a light dinner, with optional add-ins like tomato, red onion, or crispy bacon to enhance the flavors.

Ingredients

Main Ingredients

  • 2 slices sourdough or artisan bread
  • 1/2 ripe avocado, mashed
  • 1/2 cup cooked shredded chicken (grilled or rotisserie)
  • 2 slices cheddar or Monterey Jack cheese
  • 1 tbsp mayonnaise or aioli (optional)
  • 1 tsp lemon juice
  • 1 tbsp butter for toasting
  • Salt and pepper to taste

Optional Add-Ins

  • Sliced tomato
  • Sliced red onion
  • Crispy bacon

Instructions

  1. Prepare avocado mixture: In a small bowl, mash the ripe avocado and mix in lemon juice, salt, and pepper to taste. Set aside.
  2. Mix chicken with mayo: If using mayonnaise or aioli, combine it with the shredded chicken in a separate bowl for added creaminess. Otherwise, keep chicken plain.
  3. Assemble sandwich: Spread the mashed avocado mixture evenly onto one slice of sourdough bread. Layer the shredded chicken mixture on top, followed by optional add-ins like sliced tomato, red onion, or crispy bacon. Place the cheese slices on top and cover with the second slice of bread.
  4. Toast sandwich: Heat a skillet or frying pan over medium heat. Spread butter on the outside of both bread slices. Place the sandwich in the pan and cook for about 3-4 minutes per side, pressing gently, until the bread is golden brown and the cheese has melted.
  5. Serve: Remove the sandwich from the pan, let it rest for a minute, then slice in half and serve warm.

Notes

  • Use ripe avocado for the best creamy texture and flavor.
  • For a healthier option, substitute mayonnaise with Greek yogurt or skip it entirely.
  • You can use leftover rotisserie chicken to save time.
  • Butter the bread evenly to ensure a crispy, golden crust.
  • Optional add-ins like tomato, onion, or bacon add layers of flavor but can be omitted for simplicity.
  • Use a nonstick pan or sandwich press for easier cooking and cleanup.
