Perfect for serving chilled alongside crackers, chips, or fresh vegetables, this easy-to-make dip offers a perfect balance of creamy texture and zesty pickle flavor.

Ingredients

Dip Base

  • 1.5 cups cottage cheese (blended until smooth and creamy)
  • 0.5 cup mayonnaise
  • 3 tbsp pickle brine
  • 1 tsp Dijon mustard

Pickle and Seasonings

  • 0.5 cup finely chopped dill pickles
  • 2 tsp dried dill (or 1 tbsp fresh dill, finely chopped)
  • 0.25 tsp garlic powder
  • salt, to taste
  • black pepper, to taste (freshly ground for best flavor)

Instructions

  1. Blend the Cottage Cheese: Place the cottage cheese in a blender and blend until smooth. Scrape down the sides as needed to achieve a creamy, even texture, which forms the base of the dip.
  2. Prepare the Dill Pickles: Finely chop enough dill pickles to measure 1/2 cup. Ensure the pieces are small and uniform to evenly distribute the tangy pickle flavor throughout the dip.
  3. Combine Ingredients and Adjust Seasoning: In a small bowl, mix the blended cottage cheese, chopped dill pickles, mayonnaise, pickle brine, Dijon mustard, dried dill, garlic powder, salt, and freshly ground black pepper. Stir thoroughly and taste, adjusting seasoning as necessary keeping in mind the flavors will intensify as the dip chills.
  4. Chill and Let Flavors Meld: Refrigerate the dip for at least 1 hour to allow the flavors to meld together fully. Serve chilled with your favorite crackers, chips, or fresh vegetables for a delicious and creamy snack or appetizer.

Notes

  • Use fresh dill instead of dried for a brighter herb flavor.
  • For a smoother dip, ensure the cottage cheese is thoroughly blended.
  • Adjust pickle brine amount depending on preferred tanginess and saltiness.
  • Substitute mayonnaise with Greek yogurt for a lighter version.
  • Chill the dip overnight for the best flavor development.
