Ingredients

Vegetables

  • 1 medium zucchini, thinly sliced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced

Cheese Mixture

  • 1 1/2 cups shredded mozzarella

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the lasagna.
  2. Sauté Vegetables: Lightly sauté the diced red and yellow bell peppers along with the spinach in a pan over medium heat until they become tender, about 5 minutes.
  3. Prepare Cheese Mixture: In a mixing bowl, combine the low-fat ricotta, egg, garlic powder, Italian seasoning, salt, and pepper. Stir until well blended.
  4. Layer Ingredients: In a baking dish, start by layering the thinly sliced zucchini or lasagna noodles if preferred, followed by a layer of the sautéed vegetables, then spread the ricotta cheese mixture, and sprinkle some shredded mozzarella cheese.
