Ingredients

Chicken Marinade

  • 1 pound boneless skinless chicken breasts, diced

Rice Layer

Avocado Layer

  • 2 ripe avocados, diced
  • Juice of 1/2 lime
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken: In a medium bowl, whisk together olive oil, lime juice and zest, honey, minced garlic, chili powder, salt, and pepper. Add the diced chicken and stir to coat evenly. Cover and let it marinate for at least 20 minutes or up to 2 hours in the fridge for enhanced flavor.
  2. Cook the chicken: Heat a skillet over medium-high heat. Once hot, add the chicken along with the marinade and sauté until golden and fully cooked through, about 8 minutes. The outside should be lightly caramelized while the inside remains tender.
  3. Prepare the rice layer: While the chicken cooks, combine the cooked jasmine or basmati rice with lime juice, chopped cilantro, and a pinch of salt. Fluff the mixture with a fork and set aside to maintain lightness.
  4. Prepare the avocado layer: In a small bowl, toss the diced avocados with lime juice, salt, and pepper. You can leave them chunky for texture or lightly mash for a creamier layer.
  5. Assemble the stack: Using a round mold or a small bowl, layer the rice on the bottom, followed by the avocado layer, then top with the honey lime chicken. Press gently to set the shape, then carefully lift the mold to reveal a neat stack.
  6. Garnish and serve: Sprinkle extra cilantro or sliced green onions on top, add a lime wedge on the side, and serve immediately. This stack pairs wonderfully with a side salad or refreshing sparkling water with lime.
