A rich and creamy keto-friendly chicken dish simmered with fresh spinach and a luscious cream cheese sauce, perfect for a comforting low-carb meal.

Ingredients

Protein

  • 4 boneless, skinless chicken thighs

Vegetables

  • 2 cups fresh spinach
  • 2 cloves garlic, minced

Dairy

  • 1 cup heavy cream
  • 1/2 cup cream cheese, softened

Liquids

  • 1/2 cup chicken broth

Seasonings

  • Salt and pepper to taste

Instructions

  1. Prepare the chicken: Season the boneless, skinless chicken thighs evenly with salt and pepper, then place them at the bottom of the crockpot.
  2. Mix the sauce: In a medium bowl, whisk together the heavy cream, chicken broth, softened cream cheese, and minced garlic until you have a smooth, creamy mixture.
  3. Combine and layer: Pour the creamy mixture over the seasoned chicken in the crockpot, then evenly distribute the fresh spinach on top.
  4. Cook the dish: Cover the crockpot and cook on low heat for 7 hours to allow flavors to meld and chicken to become tender, or cook on high heat for 4 hours if pressed for time.
  5. Serve: Once the chicken is fully cooked and the sauce is creamy and hot, serve immediately and enjoy your keto creamy spinach chicken.

Notes

  • For a thicker sauce, you can remove the lid during the last 30 minutes of cooking to allow some liquid to evaporate.
  • Fresh spinach can be substituted with frozen spinach; just be sure to thaw and drain excess water before adding.
  • This dish pairs well with cauliflower rice or steamed vegetables for a complete keto meal.
  • To make the dish dairy-free, substitute heavy cream and cream cheese with coconut cream and a dairy-free cream cheese alternative.
  • Chicken thighs provide more flavor and moisture compared to chicken breasts, but breasts can be used; adjust cooking time accordingly.
