Ingredients
Shrimp Mixture
1 pound shrimp, peeled and deveined
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon Cajun seasoning
Salt and pepper to taste
Cauliflower Grits
1 large head of cauliflower, cut into florets
1 cup heavy cream
1/4 cup cream cheese, softened
Salt and pepper to taste
Topping
1 cup shredded cheddar cheese
Green onions for garnish (optional)
Instructions
Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
Prepare Cauliflower Grits: Steam or boil the cauliflower florets for about 7 minutes until tender. Drain well and blend together with heavy cream, cream cheese, salt, and pepper until smooth and creamy.
Cook Shrimp: Heat olive oil in a skillet over medium heat. Add minced garlic and cook until fragrant. Add shrimp and cook until pink and cooked through, about 3-4 minutes. Season with Cajun seasoning, salt, and pepper.
Assemble Casserole: Grease a 9×13-inch baking dish. Spread the cauliflower grits evenly on the bottom, then layer the cooked shrimp mixture on top. Sprinkle shredded cheddar cheese over the shrimp layer.
Bake: Bake in the preheated oven for 25 minutes or until the cheese is melted, bubbly, and lightly golden.
Garnish and Serve: Remove from oven and garnish with chopped green onions if desired. Serve warm for a comforting keto meal.
Notes
Ensure the cauliflower is well drained after steaming to avoid watery grits.
You can substitute cheddar cheese with Monterey Jack or mozzarella for a milder flavor.
Adjust Cajun seasoning to your preferred spice level or substitute with smoked paprika for a different flavor profile.
Use fresh shrimp for best taste and texture; frozen shrimp must be fully thawed and patted dry.
For a dairy-free version, substitute cream cheese and heavy cream with coconut cream and a vegan cream cheese alternative.
