Ingredients

Vegetables

  • 2 cups cauliflower florets
  • 2 cups broccoli florets

Cheese and Dairy

  • 1 cup shredded cheddar cheese
  • 1 cup cream cheese softened
  • 1/2 cup sour cream
  • 1/2 cup milk

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Toppings

  • 1/2 cup cooked bacon crumbled
  • 1/4 cup green onions chopped
  • 1/2 cup panko breadcrumbs optional

Instructions

  1. Preheat oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the casserole.
  2. Cook vegetables: Steam or boil the cauliflower and broccoli florets until just tender, about 5-7 minutes, then drain thoroughly to avoid excess moisture.
  3. Prepare cheese sauce: In a mixing bowl, combine softened cream cheese, sour cream, milk, garlic powder, onion powder, salt, and black pepper until smooth and creamy.
  4. Mix casserole: In a large bowl, gently fold the cooked cauliflower and broccoli into the cheese sauce. Add shredded cheddar cheese, half of the crumbled bacon, and half of the green onions, mixing until well combined.
  5. Assemble casserole: Transfer the mixture to a greased baking dish. Sprinkle the remaining cheddar cheese on top, followed by the rest of the bacon, green onions, and optionally the panko breadcrumbs for extra crunch.
  6. Bake: Place the casserole in the preheated oven and bake for 25 minutes, or until the top is golden brown and bubbly.
  7. Serve: Remove from the oven and let cool for a few minutes before serving warm as a delicious side dish.

Notes

  • For a gluten-free version, omit the panko breadcrumbs or substitute with gluten-free breadcrumbs.
  • You can substitute milk with almond milk or other plant-based milk for a lighter version.
  • Feel free to add extra vegetables like chopped bell peppers or mushrooms for more variety.
  • Leftovers can be refrigerated and reheated in the oven to maintain crispiness.
  • To reduce fat content, use reduced-fat cream cheese and cheddar cheese.
