  • 2 tablespoons unsalted butter
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat the Broth: In a saucepan, heat the chicken or vegetable broth and keep it warm over low heat to ensure even cooking of the rice.
  2. Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the finely chopped onion and minced garlic, cooking until softened and translucent. Then add the sliced mushrooms and sauté until they release their moisture and become tender, about 5-7 minutes.
  3. Toast the Rice: Stir in the Arborio rice and cook for 1-2 minutes until the grains are lightly toasted and coated with oil, which helps develop flavor.
  4. Add Wine and Broth: Pour in the white wine and cook, stirring frequently, until the wine is fully absorbed by the rice. Then, gradually add the warm broth one ladle at a time, stirring continuously and allowing each addition to be absorbed before adding more. Continue this process for about 18-20 minutes until the rice is creamy and cooked al dente.
  5. Finish the Risotto: Remove the skillet from heat and stir in the unsalted butter and grated Parmesan cheese until melted and incorporated. Season with salt and freshly ground pepper to taste. Let the risotto rest for a couple of minutes to thicken slightly.
  6. Serve: Spoon the risotto onto plates and garnish with chopped fresh parsley. Serve immediately, optionally paired with a glass of white wine for a complete dining experience.
