Ingredients

Instructions

  1. Prepare the Oven and Pan: Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal of the brownies.
  2. Cook and Puree Sweet Potato: Steam, boil, or bake the sweet potato until tender, then mash it thoroughly until smooth to create the puree.
  3. Mix Wet Ingredients: In a large bowl, combine the sweet potato puree, peanut butter, honey or maple syrup, and eggs. Stir until the mixture becomes smooth and creamy.
  4. Incorporate Dry Ingredients: Add cocoa powder, flour, salt, and baking powder to the wet mixture. Gently stir until just combined, being careful not to overmix.
  5. Add Chocolate Chips: If desired, fold in the white chocolate chips gently for bursts of sweetness in every bite.
  6. Transfer and Bake: Pour the batter into the prepared baking dish and spread it evenly. Bake for 30 minutes, or until a toothpick inserted in the center comes out clean.
