1 cup fresh pineapple juice
1/2 cup mint-infused simple syrup
1 cup club soda or sparkling water

Mint-Infused Simple Syrup
1 cup water
1 cup sugar
A handful of fresh mint leaves
Instructions
Prepare the mint-infused simple syrup. Combine 1 cup water, 1 cup sugar, and a handful of fresh mint leaves in a saucepan. Heat over medium heat, stirring frequently until the sugar dissolves completely. Remove from heat and let the mixture steep for 15 minutes to infuse the mint flavor. Strain out the mint leaves and let the syrup cool completely before use.
Mix the pineapple mint base. In a pitcher, combine 1 cup fresh pineapple juice with 1/2 cup of the cooled mint-infused simple syrup. Stir well to blend the flavors evenly.
Assemble the cooler. Fill serving glasses with ice cubes to chill. Pour the pineapple and mint syrup mixture over the ice.
Add sparkling water. Top off each glass with 1 cup of club soda or sparkling water to give a refreshing fizzy finish.
