Ingredients

  • 1 large ripe mango, peeled and sliced into thin strips
  • 1 green onion, finely chopped
  • 1/4 cup sweet bell red pepper, chopped (1/4 of a red bell pepper)
  • 1 cup fresh bean sprouts
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh cilantro (or parsley)

Mango Salad Dressing

  • 2 tablespoons bottled sweet chili sauce
  • Juice and zest of 1/2 lime
  • 1/2 teaspoon grated fresh ginger (or 1/8 teaspoon ground powdered ginger)
  • 1/2 teaspoon minced garlic (1 small clove)
  • 1/2 to 1 teaspoon fish sauce (or light soy sauce)

Instructions

  1. Make Dressing: In a small bowl, mix together the sweet chili sauce, lime juice and zest, grated ginger, minced garlic, and fish sauce (or light soy sauce) until well combined.
  2. Prepare Salad: In a serving bowl, combine the sliced mango, fresh bean sprouts, chopped red bell pepper, chopped cilantro, and finely chopped green onion.
  3. Toss Salad: Just before serving, pour the dressing over the salad ingredients and toss gently to combine everything evenly.
  4. Season to Taste: Add salt and pepper to taste. If the mango is on the tarter side, optionally add a splash of maple syrup, honey, brown sugar, or additional sweet chili sauce to balance the flavor.
  5. Serve: Serve the salad fresh as a refreshing appetizer or side dish.
