Ingredients

Salad

  • 1 large ripe mango, peeled and sliced into thin strips
  • 1 green onion, finely chopped
  • 1/4 cup sweet red bell pepper, chopped
  • 1 cup fresh bean sprouts
  • 2 tablespoons chopped fresh cilantro
  • salt and pepper, to taste

Dressing

  • 2 tablespoons bottled sweet chili sauce
  • 1/2 lime (juice plus zest)
  • 1/2 teaspoon grated fresh ginger
  • 1/2 teaspoon minced garlic (1 small clove)
  • 1 teaspoon fish sauce (or light soy sauce)

Instructions

  1. Prepare the dressing: In a small bowl, whisk together the sweet chili sauce, lime juice and zest, grated ginger, minced garlic, and fish sauce until well combined.
  2. Assemble the salad: In a serving bowl, combine the sliced mango, bean sprouts, chopped red bell pepper, chopped cilantro, and green onion.
  3. Toss the salad: Just before serving, pour the dressing over the salad and gently toss to coat all ingredients with the dressing evenly.
  4. Season to taste: Add salt and pepper as desired. If the mango is on the tarter side, stir in a splash of maple syrup, honey, brown sugar, or additional sweet chili sauce to balance the flavors.
