Ingredients

Dough

  • 2 1/4 teaspoons active dry yeast
  • 1 cup warm water
  • 1 tablespoon sugar
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil

Filling

  • 1 tablespoon olive oil
  • 2 large onions, thinly sliced
  • 3 cups fresh spinach
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup marinara sauce
  • Salt and pepper to taste

Topping

  • 2 tablespoons nutritional yeast (optional)

Instructions

  1. Activate Yeast: In a small bowl, mix the active dry yeast with warm water and sugar. Let it sit for 10 minutes until foamy, indicating the yeast is active.
  2. Prepare Dough: In a large bowl, combine the all-purpose flour and salt. Add the yeast mixture and olive oil, then knead the ingredients into a smooth dough for about 10 minutes. Cover the dough and let it rise for 1 hour until doubled in size.
  3. Caramelize Onions: Heat olive oil in a pan over medium-low heat. Add the thinly sliced onions and cook, stirring occasionally, for 20 minutes until they turn golden and caramelized.
  4. Cook Filling: Add minced garlic, fresh spinach, dried oregano, and optional red pepper flakes to the onions. Cook for 3 more minutes until the spinach wilts. Season with salt and pepper to taste. Remove from heat and let cool.
  5. Preheat Oven: Preheat your oven to 375°F (190°C) and grease a baking dish to prepare for the rolls.
  6. Assemble Rolls: Roll out the dough into a rectangle on a floured surface. Evenly spread the marinara sauce over the dough, then spread the cooled spinach-onion mixture on top.
  7. Roll and Slice: Starting from the long side, tightly roll the dough into a log. Slice the log into 12 rolls and arrange them evenly in the greased baking dish.
  8. Add Topping and Bake: Sprinkle the rolls with nutritional yeast if using. Bake in the preheated oven for 30 minutes until the rolls puff up and turn golden brown.
